This is soooooooo tasty and sooooooooo simple!
2 Tbl. vegetable oil
1 onion, chopped
2 (16 oz.) cans of black beans
1/2 lb. ham, cubed
1 tsp. cumin
28 oz. crushed tomatoes
Cooked rice, red onion, and sour cream for garnish
Heat oil in a large pot, adding onion and cooking for 10 minutes. Add beans, ham, cumin, and tomatoes. Cook for another 20-30 minutes, allowing flavors to combine (I usually let it simmer for up to an hour). Serve over hot rice and garnish with onion and sour cream.
This looks good. My sister in law gave me a black bean soup recipe that has more of a mexican flare. This looks a lot easier to make!
